Simon Hopkinson's Roast Chicken Is A Hit

I made Simon Hopkinson's Roast Chicken recipe the other night, and it was really good and easy. Mine wasn't quite brown and crispy enough, so I put it under the broiler for about 5 minutes at the end, before letting it rest.




I highly recommend the recipe, and luckily you don't even have to buy the whole book- you can do what I did and get the recipe from Serious Eats.
