Cheese Fondue
Remember cheese fondue? OK, if you're young, you might not remember the first time it was popular, in the 70s, but do you remember any of its slightly ironic resurgences? Yes? No?
It turns out that it doesn't matter what you remember because it's completely obvious that MELTED CHEESE IN A POT IS DELICIOUS. There are really no 2 ways about it. You've got a pot, and you've got some melted cheese, and some dippin' stuff. Also, it's really easy and fast to make. What's not to love?
We went to NY recently, and my BFF since 6th grade, Lori, picked us up from the airport AND had fondue fixins' ready. Is that a great friend or what?!?! I know you are jealous right now but I'm sorry she is mine and not up for grabs. We dipped bread, carrots and celery (refreshing!), and salami (a bit much but still good). Bread is the clear winner. Maybe multiple kinds of bread would be good. You know what else would be great? Steamed broccoli and caulflower.
Now, a lot of cheese fondue recipes tell you to put kirsch (cherry brandy) in the fondue. I don't do that for 2 reasons: 1) I don't own kirsch and don't want to spend the money/shelf space to own it just for this one thing- I think the only other thing you put kirsch in is a cherry cordial and I don't see myself making those any time soon, and 2) cherry brandy with your cheese is weird and gross in my opinion. There, I said it. I'm anti-kirsch.

Ingredients:
- 1 clove garlic
- 1 cup white wine
- 1 lb. gruyere, grated
- 1/2 lb. emmenthal, grated
- 1 1/2 Tblsp cornstarch
- Salt and fresh ground pepper
Method:
- Cut the garlic clove in half and rub around inside of fondue pot. Discard.
- Heat wine in pot over medium heat until it bubbles.
- Meanwhile, toss cheese and cornstarch in a bowl. Add cheese to wine, a handful at a time, and stir in.
- Stir and season with salt and pepper until cheese is all melted.
- Put over fondue pot fire thingy and serve with bread, veggies, and meat.
