Raw Apple Cake

My aunt Mary was just visiting from Georgia and she made this deeeeeeeeelicious cake. I'm not sure why it's called a "raw apple cake" but I don't care because it's great.

The recipe is a little odd but the result is a moist and tasty cake. I actually didn't have all of the right ingredients so I changed it a little and it was a big hit. I served it for dessert with a bit of unsweetened whipped cream (because the cake is pretty sweet) and then ate the rest for breakfast. Yum!




Raw Apple Cake

Ingredients:
  • about 5 cups apples
  • 1 3/4 cup sugar
  • 1 tsp cinnamon
  • 1 tsp salt
  • 2 cups flour
  • 1/2 tsp baking soda
  • 2 beaten eggs
  • 1/4 cup oil + 1/2 cup melted crisco OR 3/4 cup oil
  • 2 tsp vanilla

Method:
  • Preheat the oven to 350. Prepare a 9x13 pan with baking spray.
  • Peel and roughly chop the apples, into approximately 1/2 inch squares. They don't all have to be the same size and some can be kind of big. Put them in a bowl.
  • Pour the sugar, cinnamon, and salt over the apples and mix well.
  • Sift the flour and baking soda over the mixture and mix well.
  • Beat the eggs, oil, and vanilla together. Add to the apple mixture and mix just until blended.
  • Spoon batter into prepared pan. Bake for about 45 minutes, just until a knife comes out clean.

    Karen, I made this recipe for a brunch this past weekend. It was yummy! As one of my guests said, it tastes like the inside of an apple pie without the crust to get in the way. Thanks for sharing such a tasty (and easy) recipe.
