Roasted Asparagus
In the spirit of making things that are easy and delicious, here's how to make roasted asparagus as a side dish. This is my favorite way to make asparagus! Probably because you use oil instead of water to cook it.

- asparagus
- olive oil
- salt and pepper
- shaved parmigiano (optional)
- Heat oven to 350.
- Wash and trim the asparagus.
- Drizzle a little olive oil on a flat pan and sprinkle with salt and pepper. Roll the asparagus around in the oil.
- Cook for about 20 minutes. Remove to a plate. Sprinkle with a handful of parmigiano if desired.
