Roasted Asparagus

In the spirit of making things that are easy and delicious, here's how to make roasted asparagus as a side dish. This is my favorite way to make asparagus! Probably because you use oil instead of water to cook it.




Roasted Asparagus

Ingredients:
  • asparagus
  • olive oil
  • salt and pepper
  • shaved parmigiano (optional)
Method:
  • Heat oven to 350.
  • Wash and trim the asparagus.
  • Drizzle a little olive oil on a flat pan and sprinkle with salt and pepper. Roll the asparagus around in the oil.
  • Cook for about 20 minutes. Remove to a plate. Sprinkle with a handful of parmigiano if desired.
