B-B-B-Banana Bread

Why does it make me stutter? I don't know. I do like banana bread though. This recipe is kind of like a moist, dense, pound cake-y banana bread. Yum!




Banana Bread
You could put some wheat flour in place of some of the white flour for more texture if you want.

Ingredients:
  • 1 stick of soft butter
  • 3/4 cup sugar
  • 2 eggs
  • 3 superripe bananas
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • optional: 1/2 cup nuts and/or 1/2 cup coconut

Method:
  • Preheat oven to 350. Spray a loaf pan with non-stick spray.
  • Cream the butter and sugar in a mixer. Add the eggs, bananas, and vanilla and beat them until combined.
  • Add the dry ingredients and mix on low just until combined.
  • Pour batter into loaf pan and bake for about 45 minutes to an hour. If you stick a toothpick or knife in to see if it's done, it will be pretty clean but not super clean since the bread should be really moist.
  • Cool on a rack for 15 minutes and remove from pan.
