Broiled Figs with Feta

This is an easy, fancy-looking, tasty appetizer. It is basically no more difficult than cutting a loaf of bread and serving it with a hunk of cheese, but it seems much more glamorous! It's also a good way to use fresh figs and highlight their Mediterranean roots by combining them with two other classically Mediterranean things- feta and honey.




Broiled Figs with Feta


Ingredients:
  • Ripe figs, cut in half lengthwise
  • feta cheese (I used a mild dry French feta that worked well. If you are using a feta in water blot it on paper towels first.)
  • little bit of honey

Method:
  • Place figs cut side up on a baking sheet. (I line with foil or parchment so I don't have to clean the pan later.)
  • Using your fingers, open the fig a bit and push a little bit of feta into the opening. Smoosh some cheese on top so you have some feta inside that mounds on top.
  • Put in the broiler just until the feta browns a bit. It doesn't need to melt.
  • Put on a plate and drizzle honey over the top of them, using a spoon or a squirty bottle of honey.
