Fresh Peach Brown Sugar Mojitos
Since I was flush in delicious peaches and sweet limes from the Farmers Market, I made a special cocktail for a couple of guests- peach brown sugar mojitos.
You need really ripe peaches for this or it won't work, because you have to muddle them (muddle = smoosh them up.) You can even have overripe peaches that have some bruising (but don't go crazy or anything.) Other fruits that would work well would be raspberries, strawberries, nectarines, mangoes, or pineapples.

On the plus side since you end up straining everything you don't have to do any prep to the fruit other than washing and rough cutting.

Ingredients:
- 1 cup brown sugar
- a 1/2 inch piece of ginger, peeled
- 2 very ripe peaches, pit removed
- a small bunch of mint, stems trimmed
- 4 limes (any kind), cut in fourths
- light rum to taste
- sparkling water to taste
Method:
- Put brown sugar and ginger in small pot with 1 cup water. Bring to a boil then turn off. Set aside.
- In a tall pitcher, put the peaches and the mint. Smash them up with a potato masher or a muddler. Squeeze the limes and put the lime carcasses into the pitcher and smash those up too.
- Add some of the brown sugar syrup- about 1/4 cup to start- and smash it in as well.
- Strain the mixture into a smaller pitcher or big measuring cup. You can do all of this ahead and put it in the fridge until you're ready to make the drinks.
- Fill highball glasses with ice. Put equal parts rum and peach mixture in a shaker or just stir them together. Check if it's sweet enough and if not add more brown sugar syrup.
- Fill glasses 2/3 full and top with 1/3 seltzer. Stir and garnish with lime and/or a mint sprig.
