A Tippy, Teetery, Tasty Cake

I wanted to showcase the delicious peaches and strawberries from the Farmers Market, so I didn't want to cook them in a pie or something- I wanted them raw. Also, I had about 30 minutes to make dessert. This cake was tasty but I piled it so high with fruit and cream that it was really wobbly. No matter, the taste made up for what it lacked in structural integrity!




Tippy, Teetery, Tasty Cake
I assembled this right before dinner and put it in the fridge until dessert time, but ideally you would assemble it right before eating it so it doesn't fall over.

Ingredients:
  • 1 box yellow cake mix plus whatever it calls for
  • fresh fruit, cut up and with a little sugar sprinkled on it
  • 1 - 2 cups whipping cream
  • 1/2 - 1 cup creme fraiche
  • a couple Tblsp sugar

Method:
  • Make cake mix in 2 round layers according to directions on the box.
  • Whip the cream to very soft peak. Add creme fraiche and sugar to taste and whip to medium peak.
  • Put one layer of cake on a plate. Spread with cream, fruit, and more cream. Gently put the 2nd cake layer on top. Spread with cream and fruit.
  • You could also try spreading or piping the cream all over the outside of the cake like frosting, and putting less cream in the middle, which would be beautiful.
