Cheddar Mashed Potatoes

Due to the sore throat, there's hardly anything I can eat painlessly, so the doctor suggested mashed potatoes. So I made some delicious ones with cheddar in them since I can't eat anything else, and I thought I should get a little more nutrition than tubers alone can provide.




Cheddar Mashed Potatoes
As a side dish, this amount would serve 4-6 people. It's easy to scale since it's not dependent on perfect proportions. I like them a little chunky but if you like smooth, use a ricer instead of a masher.

Ingredients:
  • 6 large red potatoes, peeled and cut into fourths.
  • 6 tablespoons butter, cut into 8 pieces
  • half and half to taste- about 1/4 cup
  • 1/4 cup chopped chives
  • 1 cup grated cheddar
  • salt and pepper
Method:
  • Bring a large salted pot of water to boil and put the potatoes in. Cook for about 20 minutes, until a knife easily goes through the potatoes.
  • Drain water and return potatoes to pot. Mash roughly. Add butter pieces and continue mashing.
  • When potatoes are mostly mashed, add half and half, chives, cheddar, and salt and pepper to taste and keep mashing to incorporate.
  • Adjust seasonings and add more half and half if potatoes are too stiff.
