The Key To Great Lasagne (And Make Two!)

I sometimes make some lasagnes, and/or some pies, and put them in the freezer in case I ever want to have people over for an impromptu gathering. But we're not talking about pies we're talking about lasagne, for now. I freeze them raw and then cook them in a 400 degree oven for about an hour. The lasagnes are also a good thing to bring over to someone's house like if they just had a baby. Cover it well with foil, and write the instructions on it with a sharpie.



Delicious Lasagne
I wish I could tell you that there is a way to make great lasagne and it's really easy but unfortunately that's not the case. After trying a lot of different methods I have figured out you need a few things:
  • really good homemade meat sauce
  • high quality fresh ricotta and mozzarella
  • lasagne noodles that you cook, not the no-boil kind

Ingredients:

Method:
  • Cook the marinara sauce and set aside.
  • Cook the lasagne noodles as directed on the box and drain. Set aside.
  • Mix the ricotta with the egg and the parsley. Season with salt and pepper.
  • Cut the mozzarella in thin slices.
  • Put a little bit of the sauce in a 9x13 pan.
  • Put down a layer of noodles. Then a layer of sauce, then 1/3 of the ricotta, then 1/3 of the mozzarella.
  • Repeat that sequence 2 more times. Sprinkle the parmesan all over the top.
  • Cook at 400 for about an hour, until it starts bubling. OR, to save for later, cover with foil and freeze.
