Pasta With Red Peppers and Feta

Here's another recipe to try from That Was Too Much Wine For A Wednesday, Actually

My mom gave me this recipe. I would consider it easy but for the fact that you have to put it in a food processor. But on the plus side, you don't have to cut up the peppers and onions too finely or carefully. I think you could add sauteed pieces of chicken, and/or sauteed vegetables to make it heartier. You can also make the sauce ahead and then heat it up before mxing it with the pasta and feta.



Pasta with Red Peppers and Feta

Ingredients:
  • couple T olive oil
  • hot pepper flakes to taste
  • 3 red peppers, deseeded and roughly chopped
  • 1 onion roughly chopped
  • 3 cloves garlic, smashed
  • 2 T red or white wine
  • salt and pepper
  • 1/4 cup cream
  • 1 pound fusilli or penne, cooked
  • 1 or 2 T chopped basil or oregano
  • about a cup crumbled feta (fancy high quality is better, obviously)

Method:
  • Heat oil in a large saute pan. Add the hot pepper flakes and cook about 30 seconds.
  • Add onion and cook about 3 minutes.
  • Add peppers and lower heat to medium. Cover and cook about 12-15 minutes until peppers are tender.
  • Add garlic and cook about 1 minute.
  • Transfer mixture to a food processor.
  • Deglaze pan with wine. Add salt and pepper to taste and cream. Add to food processor.
  • Process until mixture is saucy with no big chunks.
  • Toss with cooked pasta, and top with herbs and feta. Serve immediately.
