New Hampshire Day 2.5: There is not a ton of ethnic food in Hanover, NH, and for a couple of California natives like Nicole and BK the dearth of Mexican food is rather devastating. We made carnitas (slow cooked crispy pork) and then did a supercharged make your own taco night.

The carnitas is always a favorite. It has 2 issues. One is that it takes anywhere from 3-6 hours depending on its mood. The other is that during the first hour of cooking it don't smell so good. But if you can get past those 2 things you will end up with an inexpensive and supremely decadent pot o' pork.
