Brendan's Boule

Ingredients:
  • 3 cups bread flour
  • 1/4 tsp instant dry yeast
  • 1 1/4 t salt
  • 1 1/2 c hot tap water
  • wheat bran flakes
  • optional seasoning: roasted garlic, herbs, cheese chunks, olives, etc.

Method:
  • Put dry ingredients in a bowl.Add seasoning if desired. Mix dry ingredients with fingers.
  • Make a well and pour in hot water. Pull dough together quickly- with your fingers- in less than one minute.
  • Cover the dough very loosely with saran wrap and let rise in a warm place for about 12 hours.
  • Punch down the dough and recover with saran wrap and let rise an additional 2 hours.
  • Preheat a Le Creuset or other cast iron pot in a 500 degree oven for about 20 minutes.
  • Dump the dough onto a floured surface. Pat the dough into a circle.
  • Pull the right side of the dough out and pull it over into the center and press down. Repeat with top, left side, and bottom. The last seam should be across the middle because it will show.
  • Sprinkle bran on the seam. Flip over the dough and sprinkle flour on the other side.
  • Flip the dough into the heated pot, with the bran seam on top.
  • Cook 30 minutes with the lid on, then crack the lid and cook 15 more minutes.
  • Remove from oven and after about 5-10 minutes wriggle the bread out of the pan and cool on a rack.
