Marinated Pork Tenderloin with Yogurt Sauce
Ingredients:
- Pork Tenderloins (about 1/3 - 1/2 lb per person)
- 1 pint Greek-style, Iranian, or other whole milk yogurt
- Garam Masala to taste
- Salt and Pepper
- Juice of 1 lemon
- About 1/4 cup Apple Cider Vinegar
- About 1/4 cup Olive Oil
- 1-2 finely chopped garlic cloves
- 1/2 handful of rough chopped sage OR cilantro OR mint
- Combine yogurt, garam masala, s+p, lemon juice, and garlic. Reserve about 1/2 of it for sauce to serve on the side. Combine the rest together and put the pork in it for at least a couple of hours. Cook the tenderloins on the grill or in a hot broiler until the inside temp registers 140, or until it's cooked through but a bit pink inside. Let rest for 10 minutes and slice. Serve with yogurt sauce on the side.
Fancy Shmancy Yet Hecka Easy Couscous
Ingredients:
- Couscous in the box
- some pine nuts
- some raisins and/or dried apricots
Method:
- Cook the couscous according to the directions, but when you put the water on to boil put the dried fruit in there. At that point you can also add some cinnamon or powdered ginger or garam masala or whatever, if you want.
- When you add the couscous into the water, throw a small handful of pine nuts in.
- When it's cooked, stir it all together.
- Sit back and watch people be impressed even though you basically did nothing.
Roasted Vegetables
Ingredients:
- Any type of vegetables that have the same cooking time, approximately, cut into roughly the same size pieces (I used sweet potatoes, red potatoes, and baby carrots)
- couple glugs of olive oil
- s+p
Method:
- Put vegetables in a roasting pan, pour oil over and smoosh the vegetables around to coat. Add S+P.
- Cook around 1 hour at 350 or 400, stirring about every 15-20 minutes.
- When they're soft inside, and a little brown on the outside, they're at their peak. But these bad boys will keep if you just turn off the oven, or leave them in a little longer- they just get more caramelized.
