Somewhat Homemade Ice Cream Cake
here's the recipe to try from My Ross to Bear.
Ingredients:

about 1/2 gallon of ice cream (a kind that goes well with chocolate- caramel pecan, mint chip, something like that)
- roughly equal parts heavy cream (or half and half) and chocolate chips, somewhere in the neighborhood of 1 1/2 - 2 cups each
- 2 boxes of brownie mix
- A pretty tall round pan, springform works the best
Method:
- Make the brownies as directed on the box, and cook each in its own pan. Hopefully you have pans that are the same size as the pretty tall round pan you're eventually going to assemble it in. If you're kind of a perfectionist, then make the brownies in the assembly pan so it's the exact right diameter.
- Heat the cream on the stove, and when it just starts to boil remove it from heat and stir the chocolate chips in. If you keep stirring they will melt and you will have ganache. Let the ganache cool down before assembling or the ice cream will melt a lot.
- To assemble, Let the ice cream soften out of the freezer for about 10 minutes. Line the pretty tall round pan with foil, as tightly as possible, and with enough overhang to wrap it up afterwards. Spray a bunch of Pam in there. Pour 1/2 the ganache in. Top it with a brownie layer. Spread 1/2 the ice cream on top. 2nd brownie, more ice cream. Put it in the freezer for about 20 minutes to harden before pouring the last of the ganache over top. Fold over the foil and freeze at least 12 hours.
- A few hours before serving, invert the whole thing onto a serving plate. Get the pan off (may need to carefully run it under hot tap water.) Carefully peel off all the foil. Clean off the edges of the plate with a wet towel. Put it back in the freezer, loosely covered in foil, until ready to serve.
- You can make this way ahead, just leave it in the pan until a few hours before you're ready to serve it!
